Spinach & Butter Bean Gnocchi


A bright green dish that sparks curiosity and is one of the easiest things you'll ever make! Its super tasty and a great way of getting a healthy meal in quick time.


+ You'll need a blender for this one!


Ingredients:

Fresh bag of gnocchi

x1 tin butter beans

x1 bag spinach

x1 vegetable stock cube

x1 handful spring onions

x2 cloves garlic

x1 chilli (optional)

x2 tbsp nutritional yeast

Salt & pepper to taste


  1. Drain and rinse the butter beans, place in a blender.

  2. Add the garlic cloves and bag of spinach to the blender.

  3. Ensure that the spinach is well washed and you may need to blend half and then add the other half!

  4. You should have the butter beans, garlic & spinach in the blender. Add half a cup of water & blend.

  5. You want the mixture blended to a thick sauce consistency, after all this is your sauce, always remember you can add more water so don't go mad before blending.

  6. Once you have your sauce add it to a large saucepan and put on a low heat.

  7. Melt the veggie stock cube in a little hot water (so it creates a paste)

  8. Stir through the veggie stock cube, chopped spring onions & nutritional yeast.

  9. Add your chopped chillis if you're adding them!

  10. Cook the sauce for 30 minutes, you may want to add a few spinach leaves for different textures.

  11. I cook my gnocchi separately, so you can do the same! Follow the instructions on the bag!

  12. Once the gnocchi and sauce are cooked, stir them together.

  13. Serve with a lovely slice of crusty sourdough, a sprinkle of spring onions or even a bit of Parmigiano Reggiano!
