Overnight Banana & Chia Seed Pudding

A gorgeous breakfast pudding, afternoon dessert or something you could quite easily binge on while watching a good film! I had the inspiration from good old over night oats and thought of completely mixing it up and came up with this. Its PACKED full of goodness and is sweet, light and moreish!



INGREDIENTS

X2 banana

1/2 cup Chia seeds

1 1/2cups soya milk

1/4 cup maple syrup

1 tsp maca powder

1 large tbsp flaxseed mix

1 tbsp cinnamon

1 tsp vanilla extract




  1. Place the chia seeds in a clean container (a container suitable for the fridge and that will fit all ingredients!).

  2. Add soya milk to the chia seeds.

  3. Add the maple syrup.

  4. You're welcome to stir through the first three ingredients before adding your powders!

  5. Add the Maca powder, flaxseed mix and vanilla extract.

  6. Stir well, the chai seeds will start to germinate when wet so stir thoroughly!



7. Mash the bananas until they form a creamy consistency.

8. Once mashed add to the chia mix!

9. Stir well and finally add the cinnamon in.

10. Stir the whole mixture well and cover with a lid.



Place in the fridge over night and enjoy in the morning! Ive added raspberries, blueberries and ground pecan nuts... PERFECT!
