Autumn Hotpot - Sweet Potato & Spinach.



This is my absolute go to this month and I've already made so many different variations of it, I've swapped the spinach for kale, added kidney beans instead of french lentils. I think you may have noticed that many of the recipes I've shared are often one pot wonders that offer versatility and are jam packed of the good stuff. This dish is vegan friendly, feeds 4, or 2 hungry humans!


Ingredients:

x1 large white onion

x1 whole garlic bulb

x2 sticks celery

x1 large sweet potato

x1 tin plum tomatoes

x1 veggie stock cube

1/4 cup green french lentils (dry)

x1 bag spinach or if you buy the giant bags 1/2!

x1 teaspoon cumin powder

x1 teaspoon The Herby Moss Seasoning, (You can also use a mixed seasoning, oregano is gorgeous in this).

Olive oil OR coconut oil.




Recipe:

  1. Put a big drizzle of olive oil or coconut oil in the saucepan on a low heat.

  2. Add one chopped onion (thick chunks are tasty!).

  3. Grate the whole bulb of garlic, yep, the whole thing. (the skin will sit on the outside of the grater). Put the grated garlic in with the onion.

  4. Chop the celery sticks and add to the onion and garlic, stirring well.

  5. Let this all sweat on a low heat for about 5 minutes - you want it transparent.

  6. Add the cumin powder and the seasoning.

  7. Add half a cup of hot water to the onion mix and stir in the stock cube.

  8. Add the tin of plum tomatoes and the lentils and leave to simmer for 10 minutes. (Covered).

  9. Now it's time to chop the sweet potato and add to the dish, stir through.

  10. Top up with hot water so it just covers the sweet potato.

  11. Cover and leave to simmer on a low heat for 45 minutes. (KEEP CHECKING YOU DONT WANT SOGGY SWEET POTATOES!)

  12. After 45 minutes add the spinach, ripped or chopped is good as it less 'stalky'.

  13. Cover and continue to cook until all the spinach has wilted.

  14. Take off the heat and let it sit for about 10 minutes before serving.


Its gorgeous to enjoy with a sprinkling of nutritional yeast, parmigiano reggiano, raw pine nuts, sourdough with butter. Obviously not all at once, ooh but imagine!
